Cocoa (like corn, among other) comes from the pre-Columbian Maya—and even the word itself, which they pronounced ka-ka-wa.

On this ceramic dating from the 8th century AD that belonged to a member of the royal family of Calakmul, you can read the word ka-ka-wa “in full,” letter by letter.

Cocoa beans are almond-shaped seeds contained in cacao pods (the fruit of the cacao tree).

Few people know the real benefits provided by unroasted cocoa beans, because what you find in Europe in shops is roasted (i.e., exposed to very high temperatures). Yet this process considerably damages the bean’s molecular structure and reduces its nutrients.

In pre-Hispanic times, only the high nobility (and warriors, during expeditions) enjoyed the privilege of being able to consume them.
